The kids go bananas over……

 I swear the kids deliberately leave bananas to over-ripen in the fruit bowl, just so Mum can whip up some muffins with chocolate chips.  These are a big hit in the lunchbox (if they last until morning that is!) and caused huge sulks last week, after a super early morning bake, when I took 6 into the office.  Baked tonight, alongside the Pumpkin bread, we’ll be lucky if they’re still in the baking tin after 48 hours!


Banana and Chocolate chip muffins




300g plain flour
175g caster sugar
100g melted unsalted butter
50g milk
2 beaten eggs
3 mashed very ripe bananas
100g chocolate chips (I chop up a Milka bar when I can’t lay my hands on some ready prepared!)
15g baking powder (5 tsp)
3g bicarbonate of soda (1 tsp)


Preheat the oven to 220 and line cupcake or muffin tray with 12 paper cases.
Sift together the flour,sugar and baking powder and set aside.
In another bowl mix the beaten eggs with the melted butter, milk and mashed bananas.
Add this to the dry ingredients along with the chocolate chips, and mix together gently.
Be careful not to over beat it.
Divide the mixture equally between the paper cases (they should be almost full) and pop into the oven. Immediately reduce the temperature to 180 this will ensure a nice high top on your muffins.
Bake for approx 18-20 minutes until they are lightly golden in colour.
