Day 237 – the Party cake and a special Present…..

It was Hubbie’s birthday today and as he was travelling all week and back late tonight, we wanted to do something a little special as a surprise for him.  The kids voted of course, to bake a cake.  But not any old cake, it had to be Jamie Olivers Party Cake (from ‘The Return of the Naked Chef’ -> apt eh!! although our Sjef didn’t return naked!).  Problem was we couldn’t find the cookbook in amongst all the clutter upstairs…. Thank God for the Internet (well it is almost the modern day equivalent of the Bible!).

Thanks to like mam used to bake: Jamie Oliver’s Party Cake. for the recipe, and the iPad, the Kids could create the cake without the cookbook (with no help whatsoever from me!).  And we had a very surprised and happy Dad when he rolled in a 9pm from Paris…….Enjoy the photo’s, and bake the cake soon, it’s delicious!

Party Cake

Ingredients (double it to make our ‘super-size’ version!)

3-rounded tbsp Cocoa Powder
200g/7oz Caster Sugar
200g/7oz Butter
3 Large Eggs, preferably free-range (or like us, fresh out of the chicken coop!)
200g/7oz Self-Raising Flour, sifted
1 rounded tsp Baking Powder
200ml/7floz Double Cream (in Belgium you need creme entier min 35% fat, and a good electric whisk!)
2 large handfuls Strawberries, hulled and chopped

Chocolate Topping:
100g/3 ¾ oz Butter
100g/3 ¾ oz best quality Plain Chocolate
100g/3 ¾ oz Icing Sugar
3tbsp Milk

1. Preheat the oven to 180°C/350°F/Gas 4.

2. Line the bases of 2 x 20cm/8” cake tins with greased greaseproof paper.

3. Mix the cocoa powder with 4tbsp of boiling water until smooth.

4. In a separate bowl, beat the sugar and butter until fluffy, add the cocoa mixture, eggs, flour and baking powder.

5. Mix well and divide between the baking tins.

6. Place in the preheated oven and bake for about 25 minutes (a skewer inserted into the centre should come out clean when cooked).  Lick out the bowl while you’re waiting for it to cook!

7. Allow to cool then remove from the tins.

8. Melt the chocolate topping ingredients in a bowl over some lightly simmering water. Stir until blended well and allow to cool.

9. Whip the double cream to soft peaks and sweeten with a little sugar to taste.

10. To assemble the cake, remove the greaseproof paper from both sponges.

11. Spread the cream over one of the sponges, and then sprinkle the strawberries on top.

12. Sandwich the second sponge on top and press down.

13. Run a knife around the edge of the cake to smooth if off and drizzle over your chocolate topping.

14. Allow the chocolate topping to firm up slightly before getting stuck in.

The ‘After Cake Baking’ Party…….

Yes Joseph brought an extra present to the party, and when he dropped it I jumped on the chair and screamed!!!!!

    • Thanks Nathalie! I’ve linked into your blog as I liked your posts, and had included the ‘fizzing up a boring chocolate cake’ as my kids are ‘coke’ addicts in the nicest sense of the word!! Will be trying that out soon. Keep in touch and a great weekend to you too!
