Diet Day 8 – A light supper – Smoked Salmon and Crumbled Goats Cheese Salad

Today started with that guilty feeling as I dragged myself out of bed and headed for the shower.  After a bit of self abuse (dry brushing followed by a cold shower), I was beginning to feel a little bit back in touch with the world again.  This mornings’ theme was pottering, which I have perfected to an art form this week.  I managed to tidy a bit, google a bit, read a bit, and hang-out a bit.  While Hubbie worked on one of his projects and the kids managed to not kill each other.  Lunch (which consisted of a suitably admonishing cabbage and potato soup) was followed by a trip to Brico (local DIY shop, to stock up on lights to brighten up our life) and the  supermarket (to lighten up our life!).  The fridge is now bulging again with fruit and veg, organic of course, and the cupboards are full of nuts and dried fruits. Luckily Inigo came with us, and loaded unsuitable foods into the trolley, otherwise our poor kids would be on detox too next week.

Then the serious sorting out started when we got home.  We now have pictures in our entrance, the lights are fixed in the kitchen and hall, and we’ve had a big chuck out of a couple of cupboards.  It’s a start at least, in a house which has accumulated so much clutter in the last 10 years, it creaks.

Over dinner, a seriously lovely Smoked Salmon Salad with Crumbled Goats Cheese, we both hit the same conclusion.  Life is pretty good.  We are beginning to slow down and appreciate that we have what we need, and do not need any more.  We are more focused as a family, and doing things together, instead of all the running around in different directions with different agenda’s, that seems to have characterised our life so much lately.  That has to be a good start, and not bad progress for only day 8, looking forward to tomorrow!

Here’s the recipe for today………….

Smoked Salmon Salad with Crumbled Goats Cheese

  • 100g smoked salmon cubes
  • salad greens sliced.  (we used cobb lettuce and roquette)
  • 2 handfuls goat feta cheese (available in health food shops)
  • 2 handfuls toasted pine nuts
  • 1 tbsp chopped fresh dill
  • 1 cooked corn on the cob
  • 1 lemon squeezed
  • olive oil (double quantity of the lemon juice)
  • pepper
  • 1 tsp agave syrup (health food shops stock this, or substitute honey)


Split the salad leaves over the 2 plates, sprinkle the salmon on top, and then the crumbled goats cheese.

Cut the corn from the cob, and sprinkle equally over the salad.  Toast the pine nuts, and add to the salad plates, along with the dill.

Place on one side and prepare the dressing.  In a measuring jug, squeeze the lemon and whisk in double quantity of the olive oil.  Add the agave syrup (or honey) and pepper.  Drizzle over the salad and serve.  A perfectly light and quick supper, delicious!

and here’s the thought for today………… a must have for the fridge door!
