Day 313 – Fish Tray Bake

Last night an old friend passed by, and stayed the night. It was lovely to see Freddie after quite a few years, catch up and reminise on the good old times in Brussels, and compare how it was all turning out. I cooked a great Jamie Oliver dish, shoved it all in the oven, opened a (few!) bottles of wine, and crawled into bed too late for a school night.
Sometimes it just needs to be done, even at our age!
Fish Tray Bake
(adapted from J.O to what I had available, and how I was feeling!)
- a selection of white fish for 4 (as salmon is not a fav in our house!)
- 12 large prawns
- a bunch of asparagus
- 1 lemon
- 1 fresh chilli
- a small bunch of fresh basil
- 1x30g jar anchovies in oil
- 4 cloves of garlic
- 4 tomatoes
- 6 slices of raw ham (as pancetta wasn’t available)
Add the fish and the asparagus to a large roasting dish with a good sprinkle of salt and pepper. Quarter the lemon and add it to the tray. Finely chop the chilli and add it with the basil leaves. Drizzle over the olive oil from the anchovies and tear in and add 4 fillets. Crush the 4 unpeeled cloves of garlic and drizzle over some olive oil. Roughly chop the tomatoes and add. Lay the raw ham (pancetta or bacon) over the top.
The recipe says to grill for 10 mins, I wanted some extra time so cooked at 175 deg in an oven for 30 mins (more relaxing) and still yummy!
I served with minted new potatoes and a green salad. And as I said, rather too many bottles of chilled white wine……..
