(Diet) Day 38 – Creamy Broccoli Soup!

Tonight is a quick turnaround night.  After such an early start for my daughters swim team this morning, we’re all exhausted, and in need of fast nourishment.

Jules’ broccoli and cheese soup hit the mark, with some crusty bread it was delicious.  The kids finished off with some of Hubbie’s speculoos crumble left over from yesterday with ice cream.  Everyone’s happy and content, and ready for an early monday night.  And my son is no longer worrying abut the rice and water diet his school is on tomorrow, to irder to better understand the daily diet of impoverished countries!

Here is Jules fantastic recipe;

Creamy Broccoli Soup

Ingredients

1 1/2 cups of water

2 chicken stock cubes

3 tbsp butter

2 cups of milk

1 bunch of broccoli

1 cup of cubed cheese

3 tbsp flour

bbb

Directions

Cook the broccoli and stock cubes in water for 5 mins.  Melt the butter in a separate pan.  Add flour and milk.

Cook until thickened.  Add broccoli and cheese and water.  Stir until the cheese has melted.
